Free D.O. Testing & Digital Seam Checking

It’s just one hit after another – pandemic, aluminum and then wheat prices, and now CO2 shortages.

With the recent availability issues with CO2 from suppliers across New England, we know that a lot of breweries have moved or are in the process of transitioning as much as possible from CO2 to nitrogen for brewery operations. Since it’s a new fix for a lot of us, there are still questions on how to effectively make the switch without impacting the quality of the beer – especially with respect to oxygen pick-up and DOs in the final product.

To help breweries in New England during this [potential] transition, we would like to support, by using our dedicated QA/QC lab, team, and facilities to test your DOs and can seams for free. Our experienced team will take care of testing DOs, doing digital seam checks, and sending you a QA report.

Why are we doing this? Because we love great beer, and we believe it’s important to be a part of the solution for high-quality execution for our friends and community in New England craft beer. We’ve also done some recent interviews and podcasts about the transition to nitrogen, in the hopes of being a resource to other breweries:

Tap Room Update

It’s with sadness and hope that we have made the proactive decision to close the Tap Room and restaurant for on-site consumption for eating and drinking starting on January 1st through March 1st. Based on what we have seen over the last few weeks, we have to do our part to help stop the spread of COVID-19 and keep our staff, community and customers safe. We hope this encourages others to do the same including the City and State who should frankly just shut restaurants down at this point. Small businesses and restaurants can not operate in the current climate and with all the appropriate restrictions. 

It’s the right thing to do now. For the staff and our community that we love.

We need your help to weather this next storm and are asking you for your continued support that you’ve given us over this past year. The Tap Room and restaurant will be open during this period for take out and delivery (just like last spring). Please help us by buying to-go beer (as well as cider, wine and merch/swag) as well as BBQ from M&M. We have a lot of delicious, fresh beer that you can drink from the comfort of your own home. All of your purchases make a big impact on our small business, especially during this time. We cannot express our gratitude for your continued support. We will get through this together. 

Leading up to January, 1st, we are open normal business hours and operating for on-site eating and drinking daily 11:30am-9:30pm. Please stop by and stock up on beer in the meantime. BBQ and Beer Guide: Pair M&M BBQ with the perfect DBCO. Beers!

Dorchester Brewing Company has recently expanded its operation to include one of Dorchester’s finest BBQ establishments, M&M BBQ. As a Dorchester staple, it was an easy decision to make room for a kitchen and welcome the M&M BBQ staff in order to provide our beer drinkers exceptional dining options while at the brewery. 

We wanted to provide the readers of our blog an article on some of the best ways to pair our beers with the great menu M&M BBQ has to offer.

*Since the beers we have on tap are always in rotation, this blog while feature beer ‘styles’ as opposed to specific brands brewed in house. Ask your server about the style of beers we have on tap while ordering for the best paring. DBco. Employees have become top customers of M&M BBQ, so they will know! 

Smoked Chicken

Smoked chicken is a BBQ classic. A lighter, leaner meat than pork ribs or pulled shoulder, considering lighter beers or libations tends to bode well for pairings. We recommend light pilsners, blonde ales, and even light ciders, which are now available at Dorchester Brewing. These pairings hold true regardless of additional sauce you may order on top off or on the side of your smokey, delicious chicken.

If you are drinking a pilsner, blonde ale, or light cider consider ordering the ‘Dot Special’ (Chicken Wings), New Market Square Sandwich (Fried Chicken Sandwich) , or the BBQ Chicken platter!

Ribs & Pulled Pork

With Ribs and Pulled pork, one needs to consider the sauce to which will be applied. If you order the ribs dry, IPA’s, Brown Ales, Pilsner, and even Blonde ales will pair nicely with the smokey meat flavor. M&M BBQ offers a traditional BBQ sauce, which we think pairs the best with brown ales, pilsners, and even blonde ales.

If you are drinking a Brown Ale, Pilsner, or Blonde Ale consider order M&M’s Bone-In BBQ Platter(1/2 rack of pork ribs, 1/2 smoked chicken and cornbread) , The Smokers Club Platter(Pulled pork, beef brisket and beer braised brats over sauerkraut with butter pickles, coleslaw and cornbread), or the Columbia Road Sandwich (Smoked pulled pork topped with sweet pickled red cabbage)! 

Sausages

When ordering a beer with sausage, one has to consider a number of variables. Sausages are part of numerous cultures, so the beer you would pair with a German Bratwurst Sausage would most likely differ from a Cajun Andouille Sausage, for example. M&M BBQ offers bratwurst sausage which complements the BBQ sauce M&M makes in house. Sours, IPA’s and even Rauchbier’s tends to accentuate the spices and smokiness found in both the sausage and the sauce. Like the smoked chicken, we also recommend lighter hard ciders as they are crisp and refreshing!

The ‘Mass Ave’

If you are drinking a Sour, IPA, or Rauchbier consider ordering the ‘Mass Ave’ (Bratwurst & sauerkraut braised in DBco’s V1 Double IPA, served with honey BBQ mustard) or the Smokers Club Platter (Pulled pork, beef brisket and beer braised brats over sauerkraut with butter pickles, coleslaw and cornbread)

Fried Chicken

Fried chicken is an M&M BBQ favorite and for a good reason. Owners Geo Lambert has been refining and perfecting M&M’s fried chicken recipe since taking over in 2009 to the point Bostonians from all over travel to Dorchester to purchase an order. Fried Chicken is salted to perfection, which calls for something to quench one’s thirst. Pilsners, IPA’s, and Blonde Ales are all styles we would recommend to go with M&M’s fried chicken which can be ordered over salad or as the New Market Sandwich.

M&M BBQ NOW Officially Open – Hours and Menu

We are so excited to welcome M&M BBQ, now officially open at Dorchester Brewing Company for lunch and dinner daily. Along with your favorite ribs and sandwiches, their full menu is up for grabs with bar bites like Pretzels, Dumpster Fries along with salads, brats, golden fried chicken sammies and so much more. Based on our own experience (hey, we do need to try out everything on the menu, right?!), we are pretty positive you’ll be coming back to try out each and every one of their awesome menu items!

Dorchester Brewing Welcomes M&M BBQ, Coming Soon

Dorchester Brewing Company has seen some exciting changes over the last few months. In addition to our recent Tap Room expansion, over doubling the size of our Tap Room, we have also welcomed a new on-site restaurant partner, M&M BBQ. We are thrilled to be working with them to offer our customers the chance to taste their delicious, mouth-watering food alongside our fresh beer. Now, the next time you visit DBco. no need to order delivery or bring your own food!

M&M BBQ

Dorchester Brewing has partnered with Dorchester’s own, M&M BBQ! The kitchen occupies part of our expanded space so customers can order food and enjoy anywhere in the Tap Room with our beer.

Known locally for their juicy, fall-off-the-bone ribs, M&M BBQ was originally founded by Marion and Maurice Hill in 1982, and is now operated by their grandson, Geo Lambert, who took over the business ten years ago. The restaurant is Geo’s first brick and mortar location since his grandparents time who ran several restaurants in Dorchester.

As they lead up to their grand opening on January 20th with full menu and extended hours, M&M BBQ is currently open daily from 11:30am-7:30pm with a limited menu. Please visit our social media sites for daily updates.

Introducing the Dorchester Brewing Company Wine Series

We are very excited to announce a new wine series made in collaboration with La Cantina Winery in Franklin, MA.

To complement our local craft beer at Dorchester Brewing Company, we knew we wanted to add onto our beverage offerings as we expanded the Tap Room in order to serve our gluten free customers. We are so happy to announce that all of our wines are gluten free.

All the DBco wines are made through a collaboration with an artisanal, local winery in Franklin, Massachusetts dedicated to produce crushable, quality wines. La Cantina Winery has a family tradition of Italian winemaking beginning in the mid-1900’s in Italy. They moved to Massachusetts in 1963 where these traditions have been passed down, producing small batch wines. If you haven’t heard about them, definitely check them out and we’d certainly recommend visiting their Vineyards. www.lacantinawinery.com.

We will be serving the following wines by the glass:

Sauvignon Blanc: Light to medium body, peach, grapefruit, citrus, crisp. ABV 13.5%

Gamay Rose: Medium body, juicy, strawberry, rhubarb. ABV 12.5%

Primitivo: Light to medium body, cherry, blackberry, pepper. ABV 14%

Cabernet Sauvignon: Full body, cherry, mocha, cedar, spice, lush. ABV 14%
